Ingredients

  • 300 grams spaghetti
  • 3 medium-sized yellow onions
  • 3 cloves garlic
  • 200 grams plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons red chili flakes
  • 2 tablespoons fresh parsley
  • 0 to taste grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the spaghetti and set it aside.

Step 2

Peel and thinly slice the yellow onions. Mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted, add the onions and a pinch of salt. Cook, stirring occasionally, for 12-15 minutes, or until the onions are golden and caramelized.

Step 4

Add the minced garlic to the skillet and cook for 1-2 minutes, until fragrant.

Step 5

Lower the heat and stir in the plain Greek yogurt. Mix well to create a creamy sauce, then season with the remaining salt, black pepper, and red chili flakes.

Step 6

Add the cooked spaghetti to the skillet and toss to coat in the sauce. If the sauce is too thick, gradually add the reserved pasta cooking water one tablespoon at a time until it reaches your desired consistency.

Step 7

Taste and adjust seasoning as necessary.

Step 8

Serve the spaghetti warm, garnished with freshly chopped parsley and grated Parmesan cheese, if desired.
