Ingredients

  • 400 grams Linguini pasta
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 Yellow onion
  • 4 Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 50 grams Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 0.5 cup Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguini and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, peel and thinly slice the yellow onions. Peel and mince the garlic cloves.

Step 3

In a large skillet or sauté pan, heat the olive oil and butter over medium heat until the butter is melted and the mixture begins to sizzle.

Step 4

Add the sliced onions to the pan and sauté for 10-12 minutes, stirring occasionally, until they are golden and caramelized.

Step 5

Add the minced garlic to the pan and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 6

Season the onion and garlic mixture with salt, black pepper, and red pepper flakes (if using). Stir to combine.

Step 7

Add the cooked linguini to the skillet with the onion and garlic mixture. Toss gently to coat the pasta in the flavorful mixture.

Step 8

Gradually add the reserved pasta cooking water, a little at a time, to loosen the sauce and help it cling to the linguini.

Step 9

Remove the skillet from heat and sprinkle the grated Parmesan cheese over the pasta. Toss to combine until the cheese is melted and evenly distributed.

Step 10

Garnish with chopped fresh parsley and serve immediately.
