Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 large yellow onion
  • 2 medium apple (such as Granny Smith)
  • 2 cloves garlic cloves
  • 1 cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Season both sides of the pork chops with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side, or until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil and the butter to the skillet. Once the butter is melted, add the sliced onion and cook, stirring occasionally, for 5-7 minutes or until softened and slightly caramelized.

Step 4

Peel, core, and thinly slice the apples. Add the apple slices and minced garlic to the skillet with the onions. Cook for another 3-4 minutes until the apples begin to soften.

Step 5

Pour in the chicken broth and apple cider vinegar, scraping the bottom of the skillet to release any browned bits. Stir in the thyme leaves, brown sugar, and the remaining 1/2 teaspoon each of salt and black pepper.

Step 6

Return the pork chops to the skillet, nestling them into the onion and apple mixture. Reduce the heat to low, cover the skillet, and simmer for 10-12 minutes, or until the pork chops are cooked through to an internal temperature of 145°F (63°C).

Step 7

Remove the skillet from the heat and let the pork chops rest for 5 minutes. Serve the pork chops topped with the onion and apple mixture, along with pan juices drizzled over the top.
