Ingredients

  • 12 ounces spaghetti
  • 2 cups cherry tomatoes
  • 1 medium yellow onion
  • 4 cloves garlic cloves
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 cup fresh basil leaves
  • 0.5 teaspoons crushed red pepper flakes
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cup Parmesan cheese (optional)

Directions

Step 1

Wash the cherry tomatoes and slice them in half. Finely chop the yellow onion and mince the garlic cloves.

Step 2

In a large pot or deep skillet, combine the spaghetti, cherry tomatoes, chopped onion, minced garlic, vegetable broth, and olive oil.

Step 3

Add the salt, black pepper, and crushed red pepper flakes to the pot.

Step 4

Place the pot over medium-high heat and bring the mixture to a boil.

Step 5

Once boiling, reduce the heat to medium and simmer, stirring frequently, until the pasta is cooked to al dente and the broth has reduced into a creamy sauce (around 10–12 minutes).

Step 6

Tear the fresh basil leaves into smaller pieces and stir them into the pasta during the last minute of cooking.

Step 7

Remove the pot from heat. Taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve immediately, garnished with grated Parmesan cheese if desired.
