Ingredients

  • 2 pieces (8-10 oz each) ribeye steak
  • 16 oz button or cremini mushrooms
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 4 sprigs fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup heavy cream (optional for sauce)

Directions

Step 1

Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels and season both sides generously with salt and black pepper.

Step 2

Clean the mushrooms with a damp paper towel and slice them into halves or quarters, depending on their size.

Step 3

Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and let it shimmer. Place the steaks in the pan and sear for 3-4 minutes on each side for medium-rare (adjust cook time for desired doneness). Remove the steaks from the skillet and let them rest on a plate, loosely covered with foil.

Step 4

Reduce the heat to medium. Add the remaining tablespoon of olive oil and 1 tablespoon of butter to the skillet. Add the mushrooms and a pinch of salt, stirring occasionally, and cook for 5-6 minutes until browned and tender.

Step 5

Add the minced garlic and fresh thyme to the mushrooms, stirring for 1-2 minutes until fragrant.

Step 6

Push the mushrooms to one side of the skillet and return the steaks to the pan to reheat for 1-2 minutes. Add the remaining tablespoon of butter, spooning melted butter over the steaks and mushrooms.

Step 7

If desired, stir in heavy cream to create a creamy mushroom sauce, letting it simmer for 1-2 minutes until slightly thickened.

Step 8

Serve the steaks with the mushroom mixture spooned alongside or over the top. Garnish with additional thyme sprigs if desired.
