Ingredients

  • 2 pieces Large eggs
  • 1 link Cooked breakfast sausage or turkey sausage
  • 0.25 cup Shredded cheddar cheese
  • 0.25 cup Diced bell pepper (any color)
  • 1 tablespoon Chopped green onions
  • 1 piece Flour tortilla (8-inch)
  • 1 teaspoon Butter or cooking oil
  • 0.125 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 2 tablespoons Salsa (optional)

Directions

Step 1

In a small bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

Step 2

Heat a medium nonstick skillet over medium heat and add butter or cooking oil.

Step 3

Pour the whisked eggs into the skillet and cook, gently stirring with a spatula, until soft scrambled and just set. Remove eggs from the skillet and set aside.

In the same skillet, briefly sauté the diced bell pepper until slightly softened, about 2 minutes.
