  • 2 cups Cooked rice
  • 150 grams Chicken breast, diced
  • 0.5 cup Onion, finely chopped
  • 0.25 cup Green peas
  • 0.25 cup Carrot, finely chopped
  • 3 tablespoons Ketchup
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 4 large Eggs
  • 2 tablespoons Milk
  • 1 tablespoon Butter
  • 2 tablespoons Ketchup (for drizzling)

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large pan over medium heat.

Step 2

Add the diced chicken and cook until lightly browned, about 5 minutes.

Step 3

Add the chopped onion, green peas, and carrot to the pan and sauté for another 3-4 minutes until vegetables are softened.

Step 4

Stir in the cooked rice, 3 tablespoons of ketchup, soy sauce, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and set aside.

In a large bowl, whisk the eggs and milk together until well combined.

Heat another tablespoon of vegetable oil and the butter in a non-stick pan over medium-low heat.

Pour half of the egg mixture into the pan, tilting it to ensure an even layer.
