Ingredients

  • 1 lb Pork tenderloin
  • 0.5 cup All-purpose flour
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 3 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 3 cloves Garlic cloves
  • 0.5 cup Pitted green olives
  • 0.5 cup Dry white wine
  • 0.5 cup Chicken stock
  • 2 tbsp Fresh parsley
  • 1 tbsp Lemon juice

Directions

Step 1

Slice the pork tenderloin into 8 equal medallions, about 1-inch thick each. Place the medallions between two pieces of plastic wrap and gently pound them with a meat mallet until approximately 1/4-inch thick.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Lightly dredge each pork scaloppine in the flour mixture, shaking off any excess.

Step 3

In a large skillet over medium heat, heat 2 tablespoons of olive oil and 1 tablespoon of butter until hot. Add the pork pieces in batches and cook for 2-3 minutes on each side, until golden brown and cooked through. Transfer the cooked pork to a plate and cover with foil to keep warm.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the minced garlic for 30 seconds, until fragrant.

Step 5

Add the olives, white wine, and chicken stock to the skillet. Cook for 3-4 minutes, stirring occasionally, to reduce the liquid slightly.

Step 6

Stir in the remaining 1 tablespoon of butter, fresh parsley, and lemon juice. Cook for another minute to combine the flavors and create a silky sauce.

Step 7

Return the pork scaloppine to the skillet, spooning the sauce over the top. Heat for 1-2 minutes until warmed through.

Step 8

Serve immediately, garnished with additional parsley if desired. Pair with a side of roasted vegetables or creamy mashed potatoes for a complete meal.
