Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 Garlic cloves
  • 0.25 cup Extra virgin olive oil
  • 0.5 cup Vegetable broth (or water)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks, about 2 inches each.

Step 2

Place the potato chunks in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Step 3

Peel the garlic cloves and add them whole to the pot with the potatoes.

Step 4

Bring the pot to a boil over medium-high heat, then reduce the heat to maintain a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 5

While the potatoes cook, warm the olive oil in a small saucepan over low heat just until fragrant. Do not let it smoke.

Step 6

Drain the potatoes and garlic in a colander, then return them to the hot pot to remove excess moisture.

Step 7

Mash the potatoes and garlic using a potato masher or ricer until smooth and fluffy.

Step 8

Gradually mix in the warm olive oil and vegetable broth (or water), stirring until the potatoes reach your desired consistency.

Step 9

Season the mashed potatoes with black pepper and additional salt to taste.

Step 10

Transfer the mashed potatoes to a serving bowl and garnish with chopped fresh parsley if desired. Serve warm.
