Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 2 cups Cherry tomatoes, halved
  • 8 slices Fresh mozzarella cheese, sliced
  • 1 cup Fresh basil leaves
  • 4 tablespoons Balsamic glaze
  • 1 teaspoon Italian seasoning

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and Italian seasoning.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the chicken breasts to the skillet and cook for 6-8 minutes on each side, or until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant.

Step 5

Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until softened.

Step 6

Return the chicken breasts to the skillet and spoon the cooked cherry tomatoes and garlic over the top.

Step 7

Place 2 slices of fresh mozzarella cheese on each chicken breast. Cover the skillet with a lid and allow the cheese to melt, about 2-3 minutes.

Step 8

Remove the skillet from heat and top each chicken breast with fresh basil leaves.

Step 9

Drizzle balsamic glaze over the chicken and tomatoes before serving.

Step 10

Serve hot with your choice of side, such as pasta, rice, or a fresh salad.
