Ingredients

  • 2 cups raisins
  • 1.5 cups water
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar
  • 0.25 cups all-purpose flour
  • 1 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons salt
  • 1 tablespoons unsalted butter
  • 1 tablespoons lemon juice
  • 2 9-inch unbaked pie crust
  • 1 large egg
  • 1 tablespoons milk

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a medium saucepan over medium heat, combine the raisins and water. Bring to a boil, then reduce the heat and simmer for about 5 minutes until the raisins are plump.

Step 3

In a separate bowl, mix together the granulated sugar, brown sugar, flour, ground cinnamon, ground nutmeg, and salt.

Step 4

Slowly stir the sugar mixture into the saucepan with the simmering raisin mixture. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble. This should take approximately 3-5 minutes.

Step 5

Remove the saucepan from heat and stir in the butter and lemon juice until fully melted and combined. Allow the filling to cool slightly.

Step 6

Fit one of the unbaked pie crusts into a 9-inch pie pan, trimming any overhang. Pour the raisin filling into the prepared crust and spread evenly.

Step 7

Place the second pie crust over the filling. Trim, seal, and crimp the edges to your preference. Cut small slits in the top crust to allow steam to escape during baking.

Step 8

In a small bowl, whisk together the egg and milk to make an egg wash. Brush it evenly over the top crust for a golden finish.

Step 9

Place the pie on the middle rack of the oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling through the slits.

Step 10

Remove the pie from the oven and allow it to cool on a wire rack for at least 1 hour to set before slicing and serving.

Step 11

Serve warm or at room temperature, optionally with a dollop of whipped cream or a scoop of vanilla ice cream.
