Ingredients

  • 4 medium Russet potatoes
  • 1 small Yellow onion
  • 2 large Eggs
  • 0.25 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Vegetable oil
  • 0 Sour cream or applesauce (optional)

Directions

Step 1

Peel the potatoes and grate them using the large holes on a box grater. Place the grated potatoes into a clean kitchen towel and squeeze out as much liquid as possible. Discard the liquid.

Step 2

Grate the onion on the same box grater and combine it with the grated potatoes in a large mixing bowl.

Step 3

Crack the eggs into the bowl with the potato and onion mixture. Add the flour, salt, and black pepper, and mix until fully combined.

Step 4

Heat the vegetable oil in a large skillet over medium-high heat. The oil should shimmer but not smoke.

Step 5

Scoop about 2 tablespoons of the potato mixture for each pancake and carefully place it into the hot skillet. Flatten the pancake slightly with the back of the spoon to create even rounds.

Step 6

Cook for 3-4 minutes per side, or until the edges are golden brown and crispy. Flip carefully and cook the other side for another 3-4 minutes.

Step 7

Transfer the cooked pancakes to a plate lined with paper towels to drain excess oil.

Step 8

Repeat with the remaining mixture, adding more oil to the skillet if necessary.

Step 9

Serve the potato pancakes hot with a dollop of sour cream or a side of applesauce, if desired.
