Ingredients

  • 6 Egg yolks
  • 3/4 cup Granulated sugar
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground cinnamon
  • 1/2 to 1 cup Rum or bourbon (optional)
  • 3 Egg whites (optional)
  • 2 tablespoons Powdered sugar (optional)

Directions

Step 1

In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture is smooth, creamy, and pale in color.

Step 2

In a medium saucepan, combine the milk, heavy cream, vanilla extract, nutmeg, and cinnamon. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling (around 160°F).

Step 3

Gradually pour about 1/2 cup of the hot milk mixture into the egg yolks while whisking constantly to temper the eggs and prevent scrambling.

Step 4

Slowly pour the tempered egg mixture back into the saucepan while continuously whisking.

Step 5

Cook the mixture over medium heat, stirring constantly with a wooden spoon, until it thickens slightly and reaches a temperature of 170°F to 175°F. Do not let it boil.

Step 6

Remove the saucepan from heat and let the mixture cool slightly. If you'd like to add alcohol, stir in the rum or bourbon at this stage.

Step 7

Cover the eggnog and refrigerate for at least 2 hours (or overnight) to chill completely.

Step 8

If using egg whites for added frothiness, beat the egg whites in a clean bowl with an electric mixer until soft peaks form. Gradually add in the powdered sugar and continue beating until stiff peaks form. Gently fold the whipped egg whites into the chilled eggnog right before serving.

Step 9

Serve the eggnog cold in glasses or mugs, dusted with additional nutmeg or cinnamon for garnish, if desired.
