Ingredients

  • 4 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 cup Unsalted butter
  • 2.25 teaspoons Active dry yeast
  • 0.25 cup Warm water (110°F)
  • 1 cup Sour cream
  • 2 Large egg yolks
  • 0.5 cup Granulated sugar (for filling)
  • 1 teaspoon Ground cinnamon (optional, for filling)
  • 2 tablespoons Powdered sugar (for dusting, optional)

Directions

Step 1

In a large mixing bowl, whisk together flour and salt. Set aside.

Step 2

Cut the butter into small cubes and use a pastry cutter or your fingers to blend it into the flour mixture until the texture resembles coarse crumbs.

Step 3

In a small bowl, dissolve the active dry yeast in warm water. Let it sit for 5 minutes until foamy.

Step 4

Add the sour cream, egg yolks, and activated yeast mixture to the flour and butter mixture. Mix until the dough comes together. If the dough is too sticky, add more flour, one tablespoon at a time.

Step 5

Turn the dough out onto a floured surface and knead it gently a few times to form a smooth ball. Wrap the dough in plastic wrap and chill it in the refrigerator for at least 2 hours or overnight.

Step 6

After chilling, preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

Step 7

On a floured surface, roll out the dough into a rectangle approximately 12x16 inches in size. Sprinkle the top evenly with granulated sugar and cinnamon (if using).

Step 8

Fold the dough into thirds, like folding a letter, and then roll it out again into a 12x16 inch rectangle. Repeat the folding and rolling process one more time.

Step 9

Using a sharp knife or pizza cutter, cut the dough into strips about 1 inch wide and 4-6 inches long. Twist each strip gently and place it on the prepared baking sheets, spacing them about 1 inch apart.

Step 10

Bake in the preheated oven for 12-15 minutes or until the twists are golden brown.

Step 11

Allow the twists to cool on a wire rack before serving. Optionally, dust with powdered sugar before serving for an extra sweet touch.
