Ingredients

  • 400 grams fresh okra
  • 240 ml orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 teaspoon ground coriander
  • 1 teaspoon red chili flakes
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash and dry the okra thoroughly. Trim the tops and slice each okra pod lengthwise into halves.

Step 2

Peel and mince the garlic cloves finely. Set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the sliced okra to the skillet, spreading them evenly across the surface. Sauté for 3-4 minutes, stirring occasionally, until the okra starts to soften.

Step 5

Sprinkle in the ground coriander and red chili flakes, stirring well to coat the okra in the spices.

Step 6

Pour in the fresh orange juice and add the orange zest, honey, salt, and black pepper. Stir gently to combine all the ingredients.

Step 7

Lower the heat to medium-low and let the mixture simmer uncovered for 10-12 minutes, stirring occasionally, until the okra is tender and the orange juice has reduced to a glossy sauce.

Step 8

Remove the skillet from the heat and sprinkle chopped parsley over the dish as a garnish.

Step 9

Serve warm as a side dish or over a bed of rice or quinoa for a light main course.
