Ingredients

  • 4 large eggs
  • 120 ml heavy cream
  • 60 g Gruyère cheese
  • 15 g butter (unsalted)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 pinch nutmeg
  • 1 pinch salt
  • 1 pinch black pepper
  • 500 ml water (for bain-marie)

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Butter the insides of two individual ramekins with the unsalted butter to prevent sticking.

Step 3

Pour 2 tablespoons of heavy cream into the bottom of each ramekin.

Step 4

Crack two eggs into each ramekin, being careful not to break the yolks.

Step 5

Season the eggs with a pinch of salt, black pepper, and nutmeg.

Sprinkle 30g of Gruyère cheese evenly over the eggs in each ramekin.

Step 7

Add 1 tablespoon of chopped parsley and 1/2 tablespoon of chopped chives to each ramekin for brightness and flavor.

Place the ramekins in a baking dish, then pour hot water into the dish until it reaches halfway up the sides of the ramekins (bain-marie).
