Ingredients

  • 2 racks pork baby back ribs
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 cup brown sugar
  • 0.5 cup soy sauce
  • 0.5 cup honey
  • 0.25 cup hoisin sauce
  • 3 tbsp rice vinegar
  • 1 tbsp ginger, grated
  • 3 cloves garlic, minced
  • 1 tsp sesame oil
  • 2 stalks scallions, thinly sliced
  • 2 tbsp sesame seeds (for garnish)

Directions

Step 1

Preheat your oven to 300°F (150°C). Line a large baking sheet with aluminum foil for easy cleanup.

Step 2

Prepare the ribs by removing the membrane from the back of each rack. This can be done by inserting a knife under the membrane, loosening it, and then pulling it off carefully using a paper towel for grip.

Step 3

In a small bowl, combine kosher salt, black pepper, paprika, garlic powder, and onion powder. Rub this spice mixture generously over both sides of the ribs.

Place the seasoned ribs on the prepared baking sheet, bone-side down. Cover the ribs tightly with aluminum foil and bake in the preheated oven for 2 1/2 hours, or until the ribs are tender and the meat begins to pull away from the bones.

Brush a generous amount of the prepared glaze over the ribs, making sure to cover both sides. Return the ribs to the oven and bake for an additional 20 minutes, basting with more glaze halfway through, until the glaze is sticky and caramelized.

Remove the ribs from the oven and let them rest for 5 minutes. Slice the ribs between the bones and arrange them on a serving platter.
