Ingredients

  • 120 grams All-purpose flour
  • 90 grams Rolled oats
  • 80 grams Desiccated coconut
  • 120 grams Granulated sugar
  • 100 grams Unsalted butter
  • 2 tablespoons Golden syrup
  • 1 teaspoon Baking soda
  • 2 tablespoons Boiling water
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 170°C (340°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, rolled oats, desiccated coconut, sugar, and salt. Stir until evenly mixed.

Step 3

In a small saucepan, melt the butter over low heat. Once melted, add the golden syrup and stir until combined.

Mix the baking soda and boiling water in a small bowl until the baking soda dissolves. Add this mixture to the melted butter and syrup. It will bubble slightly.
