Ingredients

  • 2 cups Rolled oats
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Unsweetened applesauce
  • 0.3 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 large Egg white
  • 0.5 cup Dried cranberries
  • 0.5 cup Raisins
  • 0.25 cup Nuts (optional, chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium-sized bowl, combine the rolled oats, whole wheat flour, baking powder, salt, and ground cinnamon. Mix well and set aside.

Step 3

In a separate large bowl, whisk together the unsweetened applesauce, honey (or maple syrup), vanilla extract, and egg white until smooth and fully combined.

Step 4

Gradually add the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix.

Step 5

Fold in the dried cranberries, raisins, and optional chopped nuts using a spatula until evenly distributed.

Step 6

Scoop heaping tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon or your fingers.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake as these cookies are meant to be soft and chewy.

Step 8

Remove from the oven and let the cookies rest on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve as a healthy snack or dessert. Store leftovers in an airtight container at room temperature for up to 5 days or in the refrigerator for up to a week.
