Ingredients

  • 10 tablespoons Unsalted butter
  • 1 cup Brown sugar
  • 1 tablespoon Granulated sugar
  • 2 teaspoons Vanilla extract
  • 0.75 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Baking soda
  • 1.5 cups Old-fashioned rolled oats

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium saucepan, melt the unsalted butter over medium heat, stirring occasionally. Once melted, remove the saucepan from the heat and let the butter cool slightly.

Step 3

Stir the brown sugar and granulated sugar into the melted butter until fully incorporated. Add the vanilla extract and mix well.

Step 4

In a separate mixing bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually fold the dry ingredients into the butter and sugar mixture until combined.

Step 5

Add the rolled oats to the mixture and stir until evenly distributed, forming a sticky dough.

Step 6

Transfer the dough onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread the dough into a very thin, even layer (approximately 1/8 inch thick).

Step 7

Bake in the preheated oven for 18-20 minutes, or until the edges turn golden brown and the surface is crisp.

Step 8

Remove the baking sheet from the oven and allow the cookie brittle to cool completely on the pan. It will continue to crisp as it cools.

Step 9

Once cooled, break the brittle into irregular pieces and store in an airtight container at room temperature for up to one week.
