Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 0.5 cup honey
  • 1 teaspoon vanilla extract
  • 1 egg, lightly beaten
  • 0.5 cup chopped nuts (such as walnuts or almonds)
  • 0.5 cup dried fruits (such as raisins, cranberries, or chopped apricots)
  • 0.25 cup chocolate chips or seeds (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, ground cinnamon, baking powder, and salt. Stir until well mixed.

Step 3

In a separate bowl, whisk together the melted butter, honey, vanilla extract, and the lightly beaten egg until smooth.

Step 4

Pour the wet ingredients into the dry ingredient mixture and stir until combined. The dough will be thick.

Step 5

Fold in the chopped nuts, dried fruits, and optional chocolate chips or seeds until evenly distributed.

Step 6

Scoop about 2 tablespoons of dough for each cookie and shape it into a ball. Place the balls onto the prepared baking sheet, around 2 inches apart. Flatten each ball slightly with the back of a spoon or your palm.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will still look slightly soft, which keeps the cookies chewy.

Step 8

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store the cooled cookies in an airtight container at room temperature for up to 5 days.
