Ingredients

  • 1 cup rolled oats
  • 1 cup buttermilk
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.33 cup unsalted butter, melted
  • 0.75 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon all-purpose flour (for coating blueberries)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium bowl, combine the rolled oats and buttermilk. Let the mixture sit for 10 minutes to allow the oats to soften.

Step 3

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.

Step 4

In a separate bowl, whisk together the melted butter, brown sugar, eggs, and vanilla extract until fully combined.

Step 5

Pour the wet ingredients into the large mixing bowl with the dry ingredients and stir until just combined. Do not overmix.

Step 6

Add the soaked oats and buttermilk mixture to the batter and gently fold until incorporated.

Step 7

In a small bowl, toss the blueberries with 1 tablespoon of flour to prevent them from sinking to the bottom of the bread. Gently fold the blueberries into the batter.

Step 8

Pour the batter evenly into the prepared loaf pan and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 10

Remove the loaf from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 11

Slice and serve. Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 1 week.
