  • 1.25 cups Buttermilk
  • 0.25 cups Vegetable oil
  • 1 Large egg
  • 1 teaspoons Vanilla extract
  • 0.5 cups Optional: Chopped nuts, dried fruit, or chocolate chips
  • 1 teaspoons Optional: Ground cinnamon or nutmeg for flavoring

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or lightly spray with non-stick cooking spray.

In a large mixing bowl, whisk together the oat bran, all-purpose flour, brown sugar, baking powder, baking soda, and salt. If using cinnamon or nutmeg, add it now and mix well.
