Ingredients

  • 1.5 cups Oat bran
  • 1 cup Whole wheat flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Honey
  • 0.75 cup Unsweetened applesauce
  • 0.5 cup Low-fat milk
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the oat bran, whole wheat flour, baking powder, baking soda, cinnamon, and salt.

Step 3

In a separate medium bowl, whisk the egg until lightly beaten. Then add the honey, applesauce, milk, and vanilla extract. Mix until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix the batter.
