Ingredients

  • 1.5 cups rolled oats
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 1 cup unsweetened applesauce
  • 0.5 cups milk
  • 0.25 cups vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 0.5 cups brown sugar
  • 0.5 cups raisins (optional)
  • 0.5 cups chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Stir well to evenly distribute the dry ingredients.

Step 3

In a separate mixing bowl, whisk together the unsweetened applesauce, milk, vegetable oil, egg, vanilla extract, and brown sugar until smooth and well blended.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Gently mix until just combined. Do not overmix—it’s okay if the batter is slightly lumpy.

Step 5

If desired, fold in the raisins and/or chopped nuts for added texture and flavor.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about two-thirds of the way full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
