Ingredients

  • 115 grams unsalted butter
  • 150 grams light brown sugar
  • 50 grams granulated sugar
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 125 grams all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 240 grams rolled oats
  • 150 grams raisins

Directions

Step 1

Preheat your oven to 175°C (350°F). Line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, beat together the butter, light brown sugar, and granulated sugar until creamy and smooth using an electric mixer or wooden spoon.

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt.

Step 5

Slowly add the dry ingredients to the wet mixture, mixing until just combined.

Step 6

Fold in the rolled oats and raisins until evenly distributed throughout the dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should still look soft.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies once cooled and enjoy them with a glass of milk or your favorite hot drink.
