Ingredients

  • 16 oz Elbow macaroni
  • 4 tbsp Unsalted butter
  • 4 tbsp All-purpose flour
  • 4 cups Whole milk
  • 1 cup Heavy cream
  • 3 cups Sharp cheddar cheese (shredded)
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 2 tsp Dijon mustard
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Breadcrumbs (optional)
  • 1 tbsp Olive oil (optional, for breadcrumbs)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Bring a large pot of salted water to a boil and cook the macaroni according to package instructions until just al dente. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a smooth roux. Cook for about 1 minute, whisking constantly.
