Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 large red bell pepper
  • 2 cups broccoli florets
  • 1 cup unsalted peanuts
  • 3 minced garlic cloves
  • 1 tbsp ginger
  • 3 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 0.5 tsp red chili flakes (optional)
  • 2 sliced green onions
  • 2 cups white rice (optional, for serving)

Directions

Step 1

Cut the chicken breasts into thin strips and place them in a bowl.

Step 2

Toss the chicken with 1 tablespoon of cornstarch and 1 tablespoon of soy sauce. Let it marinate for 10 minutes.

Step 3

While the chicken marinates, slice the red bell pepper into thin strips and prepare the broccoli florets. Mince the garlic and grate the ginger.

In a small bowl, mix the hoisin sauce, remaining soy sauce, honey, remaining cornstarch, sesame oil, and a quarter cup of water to create the stir-fry sauce. Add red chili flakes if using. Set aside.
