Ingredients

  • 250 grams All-purpose flour
  • 120 grams Unsalted butter
  • 50 grams Granulated sugar
  • 60 milliliters Cold water
  • 1 pinch Salt
  • 1 Egg yolk
  • 75 grams Pecans
  • 75 grams Walnuts
  • 75 grams Almonds
  • 50 grams Honey
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

In a large bowl, combine the all-purpose flour and a pinch of salt. Add the unsalted butter in, cubed, and rub together with your fingertips until the mixture resembles coarse breadcrumbs.

Step 3

Add the granulated sugar and mix well. Then, add the egg yolk and about half of the cold water, mixing until the dough comes together. Add more water if necessary.

Step 4

Turn the dough out onto a lightly floured surface and knead gently until smooth. Wrap in plastic wrap and refrigerate for 15 minutes to rest.

While the dough rests, chop pecans, walnuts, and almonds into coarse pieces and place them in a bowl.

Add honey, cinnamon, and vanilla extract to the nuts. Mix well until all nuts are coated.

Remove the dough from the fridge. Roll it out on a floured surface into a rectangle about 3mm thick.

Spread the nut mixture evenly over the rolled-out dough, leaving a small border around the edges.

Tightly roll up the dough from one of the long sides to encase the nuts, then cut into 2cm thick slices.

Place the slices on the prepared baking tray, ensuring they are spaced apart to allow for spreading.

Bake for 20-25 minutes until golden brown and aromatic.

Remove from the oven and allow the pastries to cool on a wire rack before serving.
