Ingredients

Directions

Step 1

In a medium-sized saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

Step 2

While the milk and cream are heating, separate the eggs. Place the yolks in a medium mixing bowl (discard the whites or save them for another use).

Step 3

Add the granulated sugar to the egg yolks, and whisk vigorously until the mixture is pale yellow and slightly thickened.

Once the milk-cream mixture is warm, gradually add about 1/2 cup of it to the egg yolk mixture, whisking constantly to temper the eggs and prevent curdling.
