Ingredients

  • 4 pieces (6 oz each) cod fillets
  • 1 cup white wine
  • 1 cup panko breadcrumbs
  • 1 cup (finely chopped or ground) almonds
  • 0.5 cup (grated) parmesan cheese
  • 2 tbsp (melted) unsalted butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 whole (sliced into wedges for serving) lemon

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Pat the cod fillets dry with paper towels and season them on both sides with salt and pepper. Place them on the prepared baking sheet.

Step 3

In a small mixing bowl, combine the panko breadcrumbs, chopped almonds, grated parmesan cheese, garlic powder, paprika, and melted butter. Mix well until the ingredients are fully incorporated.

Step 4

Spread the breadcrumb mixture evenly over the top of each cod fillet, pressing lightly to adhere the mixture to the fish.

Step 5

Drizzle olive oil over the breadcrumb-coated fillets for a golden crust while baking.

Step 6

Pour the white wine into the bottom of the baking sheet, making sure not to pour it over the topping on the fish. This will steam the cod and keep it moist during cooking.

Step 7

Bake in the preheated oven for 15-20 minutes, or until the cod flakes easily with a fork and the topping is golden brown.

Step 8

Remove from the oven and let sit for 2-3 minutes. Serve hot with lemon wedges on the side for squeezing over the fish.
