Ingredients

  • 2 cups Whole wheat flour
  • 1 cup Jaggery (grated or powdered)
  • 2 tablespoons Ghee (clarified butter)
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Sesame seeds
  • 0.75 cups Water
  • 1 pinch Salt
  • 2 tablespoons Ghee (for cooking)

Directions

Step 1

In a small saucepan, combine the grated jaggery and water. Heat on low until the jaggery dissolves completely. Stir occasionally. Once dissolved, turn off the heat and let it cool to room temperature.

Step 2

In a large mixing bowl, mix the whole wheat flour, sesame seeds, cardamom powder, and a pinch of salt.

Step 3

Gradually add the jaggery-water mixture to the dry ingredients while kneading to form a soft, pliable dough. If the dough is too sticky, sprinkle a little more flour; if it's too dry, add a few drops of water.

Step 4

Once the dough is ready, knead in 2 tablespoons of ghee for additional softness and flavor. Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 5

Divide the dough into 6 equal portions and roll each into a ball.

Step 6

On a floured surface, roll out each ball into a round, approximately 6 inches in diameter.

Step 7

Heat a flat skillet or tawa over medium heat. Place a rolled-out roti on the skillet and cook for 1-2 minutes until bubbles appear.

Step 8

Flip the roti, spread a small amount of ghee on the cooked side, and cook the other side until golden brown spots form.

Step 9

Flip the roti again, apply a bit more ghee, and press gently with a spatula to ensure it's cooked through. Remove from the skillet and repeat for the remaining rotis.

Step 10

Serve the Meethi Sweet Rotis warm with additional ghee or a side of yogurt for a delightful treat.
