Ingredients

  • 2 cups Basil leaves
  • 2 large Garlic cloves
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Extra-virgin olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 Ciabatta rolls
  • 8 ounces Mozzarella cheese, sliced
  • 2 medium Tomatoes, sliced
  • 1 cup Spinach leaves
  • 2 tablespoons Olive oil (for brushing)

Directions

Step 1

In a food processor, combine the basil leaves and garlic cloves. Pulse until finely chopped.

Add in the grated Parmesan cheese, extra-virgin olive oil, lemon juice, salt, and black pepper to the basil mixture. Process until well blended and smooth to create the pesto. Adjust seasoning to taste.
