Ingredients

  • 1 cup Semolina (sooji)
  • 1 tablespoon All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 cup Water
  • 2 cups Oil for deep frying
  • 1 cup Boiled chickpeas
  • 2 medium Boiled potatoes
  • 0.5 teaspoon Roasted cumin powder
  • 0.5 teaspoon Chaat masala
  • 0.25 teaspoon Red chili powder
  • 0.25 cup Tamarind pulp
  • 0.5 cup Mint leaves
  • 0.5 cup Coriander leaves
  • 2 small Green chilies
  • 0.5 teaspoon Black salt
  • 4 cups Water for pani

Directions

Step 1

In a mixing bowl, combine semolina, all-purpose flour, and salt. Gradually add water and knead to form a firm dough. Cover and let it rest for 15 minutes.

After resting, knead the dough for another 3-4 minutes and roll it into small balls.

Heat oil in a deep pan for frying.

Roll each ball into a small circle, about 2 inches in diameter. Deep fry them in hot oil until they puff up and are golden brown. Remove and drain on paper towels.

For the filling, mash the boiled potatoes in a bowl and add boiled chickpeas. Add roasted cumin powder, chaat masala, and red chili powder. Mix well and set aside.

For the pani, blend the mint leaves, coriander leaves, green chilies, tamarind pulp, and black salt with water until smooth. Strain and set aside.
