Ingredients

  • 400 grams rice noodles (bihon)

  • 5 cloves garlic, minced
  • 1 small onion, finely chopped
  • 300 grams ground pork
  • 200 grams shrimp, peeled and deveined
  • 3 tablespoons fish sauce
  • 2 tablespoons annatto powder
  • 4 tablespoons rice flour
  • 4 cups water, for sauce
  • 3 pieces calamansi or lime
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 hard-boiled eggs, sliced
  • 1 cup chicharron (fried pork rinds), crushed
  • 0.5 cup spring onions, chopped
  • 0.5 cup smoked or regular fish flakes (tinapa), optional

Directions

Step 1

Soak rice noodles in hot water for 10-15 minutes or follow package instructions until softened. Drain and set aside.

Step 2

In a large pan, heat 1 tablespoon of cooking oil over medium heat. Add garlic and onion. Sauté until onions are translucent.

Add ground pork and cook until browned and cooked through.

Add shrimp to the pan and cook until they turn pink and are fully cooked, about 3-4 minutes. Remove pork and shrimp from the pan and set aside.
