Ingredients

  • 1.5 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1 whole large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup sunflower seed butter
  • 0.5 cup powdered sugar
  • 0.75 cup semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

Step 3

In a large bowl, using an electric mixer, cream the butter, granulated sugar, and brown sugar until light and fluffy, about 3 to 4 minutes.

Step 4

Beat in the egg and vanilla extract until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 6

In a separate small bowl, mix together the sunflower seed butter and powdered sugar until smooth to create a nut-free Nutella-like filling.

Step 7

Take approximately one tablespoon of dough and flatten it slightly in your hand. Place a small teaspoon of the sunflower seed butter mixture in the center and then fold the dough around it, rolling it into a ball to enclose the filling.

Step 8

Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Step 9

Gently press a few chocolate chips onto the top of each dough ball.

Step 10

Bake in the preheated oven for 10 to 12 minutes, or until the biscuits are set on the edges but slightly soft in the center.

Step 11

Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Step 12

Enjoy your nut-free Nutella-inspired biscuits!
