Ingredients

  • 1 cup Rolled oats
  • 1 cup Medjool dates, pitted
  • 0.5 cup Sunflower seed butter
  • 2 tablespoons Chia seeds
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Sea salt
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Place the pitted Medjool dates in a food processor. Process until they form a sticky ball.

Step 2

Add the rolled oats, sunflower seed butter, chia seeds, vanilla extract, cinnamon, and sea salt to the food processor.

Step 3

Pulse until the mixture is well combined and the oats are finely chopped. It should be sticky enough to form balls. If the mixture is too dry, add a little more sunflower seed butter or a splash of water and pulse again.

Step 4

Transfer the mixture to a bowl and stir in mini chocolate chips, if using.

Step 5

Use your hands to roll the mixture into small balls, about 1 inch in diameter. You should be able to make approximately 12 energy balls.

Step 6

Place the energy balls on a baking sheet lined with parchment paper and refrigerate them for at least an hour to set.

Step 7

Once set, store the energy balls in an airtight container in the refrigerator for up to a week.
