Ingredients

  • 3 cups Rolled oats
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened coconut flakes
  • 0.25 cup Ground flaxseed
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.25 cup Maple syrup
  • 0.25 cup Olive oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried cranberries
  • 0.5 cup Dried apricots, chopped

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, pumpkin seeds, sunflower seeds, coconut flakes, ground flaxseed, cinnamon, and salt. Stir until well mixed.

Step 3

In a smaller bowl, whisk together the maple syrup, olive oil, and vanilla extract until thoroughly combined.

Step 4

Pour the wet ingredients over the dry ingredients in the large mixing bowl. Stir until all the dry ingredients are evenly coated with the syrup mixture.
