Ingredients

  • 250 grams all-purpose flour
  • 125 grams unsalted butter, cold and cubed
  • 1 pinch salt
  • 60 ml cold water
  • 250 grams kaya (coconut jam)
  • 1 large egg, for egg wash

Directions

Step 1

In a large bowl, mix the all-purpose flour and a pinch of salt.

Step 2

Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingertips to rub the butter into the flour until it resembles coarse breadcrumbs.

Step 3

Gradually add the cold water to the mixture, stirring until the dough comes together. Be careful not to overwork the dough.

Step 4

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow it to rest.

Step 5

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 6

On a lightly floured surface, roll out the dough to about 3mm thickness. Cut into 12cm diameter circles using a cookie cutter or a small bowl.

Step 7

Place about 1 tablespoon of kaya in the center of each pastry circle. Fold the circle in half to enclose the filling and press the edges to seal. You can crimp the edges with a fork for a decorative touch.

Step 8

Beat the egg in a small bowl and brush the tops of the puffs gently with the egg wash for a golden finish.

Step 9

Arrange the kaya puffs on the prepared baking sheet, leaving some space between them.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and flaky.

Step 11

Remove the kaya puffs from the oven and let them cool on a wire rack before serving.

Step 12

Enjoy these nut-free kaya puffs warm or at room temperature as a delightful snack or dessert.
