Ingredients

  • 250 grams Gluten-free all-purpose flour
  • 50 grams Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 75 grams Unsweetened applesauce
  • 100 grams Cold unsalted butter
  • 1 large Egg
  • 120 milliliters Whole milk
  • 1 teaspoon Vanilla extract
  • 75 grams Raisins or dried cranberries

Directions

Step 1

Preheat your oven to 220°C (430°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Cut the cold unsalted butter into small cubes and add to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Step 4

In another bowl, whisk together the egg, whole milk, and vanilla extract. Add the unsweetened applesauce and mix until well combined.

Step 5

Gradually add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.

Step 6

Fold in the raisins or dried cranberries until evenly distributed throughout the dough.

Step 7

Turn the dough out onto a lightly floured surface and gently pat it into a circle about 1 inch thick.

Step 8

Use a sharp knife or a bench scraper to cut the dough into 8 wedges.

Step 9

Place the scones on the prepared baking sheet, leaving enough space between them for spreading.

Step 10

Bake for 12-15 minutes or until the scones are lightly golden brown on top and cooked through.

Step 11

Remove from the oven and let cool slightly before serving. Enjoy warm with butter or your favorite gluten-free spread.
