Ingredients

  • 200 grams all-purpose flour
  • 100 grams unsalted butter
  • 50 grams granulated sugar
  • 4 tablespoons cold water
  • 0.25 teaspoon salt
  • 300 grams dark chocolate (minimum 70% cocoa)
  • 250 milliliters heavy cream
  • 50 milliliters whole milk
  • 1 teaspoon vanilla extract
  • 1 piece large egg

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

Step 3

Cut the unsalted butter into small cubes and add it to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Add cold water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. You may not need all the water.

Step 5

Gather the dough into a ball, flatten it into a disc, wrap in plastic wrap, and refrigerate for about 30 minutes.

Step 6

On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough gently into the pan and trim the edges.

Step 7

Prick the base of the pastry with a fork, line it with parchment paper, and fill with pie weights or dried beans.

Step 8

Bake in the preheated oven for 15 minutes, then remove the weights and parchment paper. Bake for another 10 minutes or until the crust is golden brown. Remove from oven and let cool.

Step 9

While the crust cools, prepare the chocolate filling. Chop the dark chocolate finely and place in a heat-resistant bowl.

Step 10

In a saucepan, combine the heavy cream and whole milk. Bring to a simmer over medium heat, then remove from the heat.

Step 11

Pour the hot cream mixture over the chopped chocolate. Let sit for a minute, then stir gently until the chocolate is fully melted and the mixture is smooth.

Step 12

Add the vanilla extract and stir to combine. Allow the mixture to cool slightly.

Step 13

Beat the large egg lightly in a small bowl and then mix it into the chocolate cream mixture until fully incorporated.

Step 14

Pour the chocolate filling into the cooled tart crust and smooth the top with a spatula.

Step 15

Bake the tart in the preheated oven for 10 minutes. The tart will appear slightly wobbly in the center when done, but it will set as it cools.

Step 16

Remove from the oven and let the tart cool to room temperature, then refrigerate for at least 1 hour to set.

Step 17

Serve chilled or at room temperature. Enjoy your Nut-Free Decadent Chocolate Tart!
