Ingredients

  • 1 cup couscous
  • 1.5 cups water
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cumin
  • 0.5 cup raisins
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

In a medium pot, bring 1.5 cups of water to a boil.

Step 2

Place the couscous in a large heatproof bowl.

Step 3

Once the water is boiling, add 1 tablespoon of olive oil and the salt to it, then pour it over the couscous. Cover the bowl tightly with a lid or plastic wrap and let it sit for 5 minutes.

Step 4

Meanwhile, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat.

Step 5

Add the chopped onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.

Step 6

Stir in the ground cinnamon and ground cumin, cooking for another minute until the spices are fragrant.

Step 7

Add the raisins to the skillet and cook for an additional 2 minutes to soften them slightly.

Step 8

Uncover the couscous and fluff it with a fork to separate the grains.

Step 9

Transfer the spiced onion and raisin mixture to the couscous and stir gently to combine.

Step 10

Season the couscous with black pepper and adjust salt to taste, if necessary.

Step 11

Drizzle the lemon juice over the couscous and toss it lightly.

Step 12

Garnish with freshly chopped parsley before serving.
