Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan or two 9-inch round cake pans.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes, using an electric mixer on medium speed.

Step 4

Add the eggs one at a time, beating well after each addition, then add the vanilla extract.

Step 5

Gradually add the flour mixture to the butter mixture in three parts, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.

Step 6

Pour the batter into the prepared pan(s) and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 8

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before frosting or serving.
