Ingredients

  • 150 grams Rolled oats
  • 100 grams All-purpose flour
  • 100 grams Unsalted butter
  • 100 grams Brown sugar
  • 2 tablespoons Golden syrup
  • 0.5 teaspoons Baking soda
  • 2 tablespoons Boiling water
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, and salt. Set aside.

Step 3

In a small saucepan over low heat, melt the unsalted butter, brown sugar, and golden syrup together, stirring occasionally until smooth and well combined. Remove from heat.

Step 4

In a small bowl, dissolve the baking soda in boiling water, then stir this into the butter mixture. The mixture will bubble up slightly and that's normal.

Step 5

Pour the butter mixture into the dry ingredients and mix well until everything is evenly coated and combined.

Step 6

Scoop tablespoons of the mixture and roll into balls. Place them onto the prepared baking trays, allowing some space between each as they will spread during baking.

Step 7

Gently flatten each ball slightly with the back of a fork.

Step 8

Bake in the preheated oven for 12-15 minutes or until golden brown around the edges.

Step 9

Remove from the oven and allow the biscuits to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
