Ingredients

  • 150 g all-purpose flour
  • 60 g desiccated coconut
  • 125 g unsalted butter
  • 50 g brown sugar
  • 397 g sweetened condensed milk
  • 2 tbsp golden syrup
  • 200 g dark chocolate
  • 1 tbsp vegetable oil

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease and line a 20cm x 30cm rectangular slice pan with baking paper.

Step 2

In a medium bowl, combine the all-purpose flour, desiccated coconut, and brown sugar.

Step 3

Melt 125g of unsalted butter in a small saucepan over low heat, then pour the melted butter into the flour mixture.

Step 4

Mix until well combined and press the mixture evenly into the base of the prepared pan.

Bake for 15 minutes or until lightly golden. Set aside to cool.

In a medium saucepan, combine the sweetened condensed milk, 2 tablespoons of golden syrup, and remaining butter (30g).

Cook over low heat, stirring constantly, for about 10 minutes or until the mixture turns a light golden brown and thickens.

Pour the caramel filling over the cooled base and return to the oven for another 10 minutes. Remove and let it cool to room temperature.

Melt the dark chocolate with 1 tablespoon of vegetable oil in a heatproof bowl over a pot of simmering water, stirring until smooth.
