Ingredients

  • 15 ounces Canned chickpeas
  • 0.5 cup Red onion
  • 0.5 cup Fresh parsley
  • 2 cloves Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper
  • 2 tablespoons Lemon juice
  • 0.5 cup Chickpea flour
  • 3 tablespoons Olive oil

Directions

Step 1

Rinse and drain the canned chickpeas thoroughly under cold water to remove excess salt.

Step 2

In a food processor, combine the chickpeas, chopped red onion, parsley, and garlic cloves. Pulse the mixture until coarsely combined. Do not over-process; it should have a chunky texture.

Step 3

Transfer the chickpea mixture to a large mixing bowl.

Step 4

Add ground cumin, ground coriander, salt, black pepper, cayenne pepper, and lemon juice to the chickpea mixture. Mix well to incorporate all the spices evenly.

Step 5

Gradually add chickpea flour to the mixture, stirring continuously until the mixture binds together and can be formed into patties.

Step 6

Using your hands, shape the mixture into small patties, about 2 to 3 inches in diameter.

Step 7

Heat olive oil in a large non-stick skillet over medium heat.

Step 8

Once the oil is hot, place the fritters in the skillet, making sure not to overcrowd the pan.

Step 9

Cook the fritters for about 4-5 minutes on each side, or until they are golden brown and crispy.

Step 10

Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.

Step 11

Serve the chickpea fritters hot with your favorite dipping sauce or a side salad.
