Ingredients

  • 2 cups beef broth
  • 3 large, sliced carrots
  • 1 cup, halved dried apricots
  • 15 ounces, drained and rinsed canned chickpeas
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cup, chopped fresh cilantro
  • 1 for juice lemon

Directions

Step 1

Cut the beef chuck into 1.5-inch cubes and pat dry with paper towels.

Step 2

In a large Dutch oven or heavy-based pot, heat 2 tablespoons of olive oil over medium-high heat.

Add the beef cubes in batches, browning them on all sides (about 5-7 minutes per batch). Remove the beef and set aside.

In the same pot, lower the heat to medium and add the chopped onions. Sauté until translucent, about 5 minutes.
