  • 2 tablespoons vegetable oil
  • 200 ml water

Directions

Step 1

Begin by preparing the chicken. Rinse and pat dry the chicken thighs. Set aside.

Slice the lemongrass stalk thinly and peel and grate the ginger and galangal.

Peel the shallots and garlic, then blend them together with the sliced lemongrass, grated ginger, and galangal into a smooth paste using a food processor or a mortar and pestle.
