Ingredients

  • 2 cups old-fashioned rolled oats

  • 0.5 cup dried apricots, finely chopped
  • 0.5 cup dried cranberries
  • 0.5 cup shredded unsweetened coconut
  • 0.5 cup unsalted butter, melted
  • 0.25 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin with non-stick cooking spray.

Step 2

In a large bowl, mix together the rolled oats, whole wheat flour, coconut sugar, ground flaxseed, chia seeds, pumpkin seeds, sunflower seeds, chopped dried apricots, dried cranberries, and shredded coconut.
