Ingredients

  • 500 grams New potatoes
  • 250 grams Carrots
  • 250 grams Green beans
  • 250 grams Yellow beans
  • 250 grams Peas (shelled)
  • 500 milliliters Water
  • 60 grams Butter
  • 250 milliliters Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh dill (optional, chopped)

Directions

Step 1

Prep the vegetables: Scrub the new potatoes clean and cut them into bite-sized pieces if large. Peel and slice the carrots into thick rounds. Trim the ends off the green and yellow beans and cut them into 2-inch pieces. Shell the peas if using fresh ones.

Step 2

In a large pot, bring the water to a boil over medium-high heat. Add the new potatoes and carrots, and cook for 10 minutes, or until they begin to soften.

Step 3

Add the green beans, yellow beans, and peas to the pot. Continue simmering for another 5-7 minutes, or until all the vegetables are tender but not mushy.

Step 4

Drain the vegetables, reserving about 1 cup of cooking liquid in the pot.

Step 5

Return the reserved liquid to the stove over medium heat. Add the butter, heavy cream, salt, and black pepper to the liquid, stirring until the butter melts and the mixture is heated through.

Step 6

Gently return the cooked vegetables to the pot and toss them in the creamy broth until evenly coated. Taste and adjust seasoning as needed.

Step 7

Serve hot, garnished with fresh dill if desired. Enjoy this simple and hearty Nova Scotian classic!
